Courtney Roulston makes a magical edible centrepiece for your Christmas table – a shortbread star tree

Chef and Coles ambassador, Courtney Roulston, joined Shirvo and Mon in the Sunrise kitchen to show how to create this delicious edible table centrepiece that will have your family and friends talking this Christmas.

Shortbread Christmas Tree

This charming biscuit tree makes a great edible centrepiece for your festive table. Whip it up with a little help from Queen.

Serves 6 Prep 30 mins (+ cooling, 10 mins standing & 30 mins chilling time) Cooking 20 mins

INGREDIENTS –

125g butter, softened

¼ cup (55g) caster sugar

1 tsp Queen Concentrated Vanilla Extract

1 cup (150g) plain flour

¼ cup (45g) rice flour

Desiccated coconut, to serve

Royal icing

1 free-range egg white*

1 tsp Queen Concentrated Vanilla Extract

1½ cups (240g) pure icing sugar, sifted

METHOD –

Preheat oven to 160°C. Line 2 baking trays with baking paper. Use an electric mixer to beat the butter, sugar and vanilla in a large bowl until pale and creamy.

Add plain flour and rice flour and stir until dough comes together. Turn onto a lightly floured surface and gently knead until smooth. Cover with plastic wrap. Place in the fridge for 30 mins to chill.

Roll out dough on a lightly floured surface to a 3mm-thick disc. Use an 8cm star-shaped cutter to cut 5 stars from the dough, rerolling excess. Repeat using 7.5cm, 5.5cm, 4.5cm, 3.5cm and 2.5cm cutters.

Place stars on the lined trays, 2cm apart. Bake, in batches, for 10 mins or until firm to touch, but not golden. Stand on trays for 10 mins. Transfer to a wire rack to cool.

Meanwhile, to make the royal icing, whisk the egg white and vanilla in a medium bowl. Gradually add the icing sugar, stirring well after each addition and add more icing sugar if necessary, until a thick paste forms. Transfer to a piping bag fitted with a 2mm plain nozzle.

Pipe icing over shortbread stars. Reserve one 2.5cm iced star. Arrange one 8cm star on a platter. Top with another 8cm star, rotating the shortbread so the points sit in between those of the previous star.

Repeat with remaining stars, from largest to smallest, to make a tree shape. Top with the reserved star, standing upright. Sprinkle with coconut to serve.
