Chef and Coles ambassador Courtney Roulston shows us how to make homemade pork and ginger dumplings with pork mince that is both affordable and also makes several meals to feed the family.

PORK & GINGER DUMPLINGS WITH QUICK CHILI OIL

Ingredients –

Dumpling filling

500g Coles pork mince

2 tablespoons fresh ginger, finely grated

2 green spring onions/scallions, finely sliced

2 teaspoons sesame oil

Pinch ground white pepper

2 tablespoons soy sauce, plus extra to serve

2 x 20 pack won ton dumpling wrappers

Coriander stems to garnish -Optional

Chili Oil

1 tablespoon dried chilli flakes

1 large clove garlic, grated

¼ teaspoon Chinese 5 spice powder

1 tablespoons Asian fried shallots

½ cup light olive oil or sunflower oil

Method –

Step 1. To make the chili oil, place the chili flakes, garlic, 5 spice powder and fried shallots into a heat proof bowl. Heat the oil until nearly smoking, then carefully pour over the chili mixture. Mix with a metal spoon while the oil is hot so everything cooks evenly. Season with sea salt flakes and set aside. The longer the oil sits, the more fragrant it will get.

Step 2. Place all the dumpling filling ingredients in a bowl and mix well.

Step 3. Place 10 the wonton wrappers on a clean tea towel. Place a heaped teaspoon of the pork mixture in the centre of the wrapper. Brush the outside of the wrapper with a little water on 2 edges. Fold the dumpling over to form a triangle shape, ensuring that no air is inside. Place a little water on one corner of the dumpling, and bring it around to meet the other side, (this will form a collar on the dumpling and allow the sauce to sit in the pocket). Repeat with all the dumplings and keep under a clean damp cloth.

Step 4. Bring a large, wide based pan of salted water up to a gentle simmer. Slide the dumplings into the pan in batches and gently poach for 5 minutes, occasionally moving around to ensure they do not stick.

Remove with a slotted spoon and place into a serving bowl. Drizzle with chili oil coriander sprigs.
