Chef and Coles ambassador Courtney Roulston joined Sunrise to show how to make this delicious spicy pork and broccolini combo.

WOK FRIED BROCCOLINI WITH SPICY PORK MINCE

Ingredients

2 bunches Family broccolini

3 tablespoons olive oil

2 large cloves garlic, finely chopped

1 tablespoons fresh ginger, finely chopped

1 long red chilli, sliced

500g pork mince

1 tablespoon Chinese cooking wine (Shoa Xing wine)

1 tablespoon soy sauce

2 tablespoons oyster sauce

1 teaspoon honey or sugar

2 teaspoons corn flour + 1/3 cup water

Method

Step 1. Heat 2 tablespoons of oil in a wok over a high heat. Stir fry the broccolini for 4- 5 minutes, or until slightly charred and tender. Remove the broccolini from the wok and place it back onto a medium-high heat.

Step 2. Add in the remaining oil with garlic, ginger and chilli. Cook for 1 minute, or until fragrant then add in the pork mince and cook until browned, breaking up with the back of a spoon for around 5-6 minutes.

Step 3. Add in the Chinese cooking wine, soy sauce and honey. Stir fry for 1-2 minutes to coat the pork mince then add the broccolini back into the wok and toss to warm through.

Step 4. Mix the corn flour and water together then pour into the wok and toss through until the sauce goes thick and glossy. Serve with steamed rice or noodles.
