Chef and Coles ambassador Courtney Roulston joined Larry and Kylie in The Morning Show kitchen to show us how to whip up this delicious dessert.

WHOLE ORANGE, CARDAMOM & ALMOND CAKE

Prep time: 10 minutes

Cook time: 1 hour 30 minutes

Ingredients

2 Whole large Oranges

1/3 cup (80ml) extra virgin olive oil

2 teaspoons baking powder

6 eggs

1 cup Caster sugar

2 cups ground almond meal

¾ cup desiccated coconut

½ teaspoon ground cardamom

Yoghurt or Cream to serve

Method

Step 1. Place the whole oranges into a pot and cover with water. Bring up to a simmer and cook for 30 minutes, or until the oranges are soft and jammy.

Step 2. Pre heat the oven to 160 degrees C. Remove the oranges from the pot and allow to cool slightly before slicing into chunks, checking for any pips as you go. Place the chopped oranges into the bowl of a food processor and blitz until thick.

Step 3. Add in the oil, baking powder, eggs, sugar, almond meal, coconut and cardamom then blitz for 10 seconds or until well combined.

Step 4. Pour the batter into a prepared cake tin and bake for 60 minutes, or until a skewer inserted into the middle of the cake comes out clean. Allow the cake to cool int the tin then remove, slice and serve with yoghurt or cream.
