Sandwich

8 Slices Coles Finest Vienna Sourdough4tbs mayo200g grated Mozzarella200g grated Red Leicester cheese12 slices smoked leg ham4tbs Dijon mustard

Smokey Tomato Soup

1 onion, diced3 garlic cloves, sliced1 red chilli, sliced2tbs smoked paprika1 bottle passata1 cup vegetable stock1 cup sourdough breadcrumbs1cup cream50g butterSea saltOlive oil

Method

In a large saucepan add a drizzle of olive oil and onions, cook until softened but not coloured. Add in the garlic, chilli and smoked paprika, fry off for a couple of minutes.Add in the passata, veg stock and a pinch of salt. Cook at a simmer until the soup thickens and the tomato cooks out. Add in the breadcrumbs, cream, and butter, cook to reduce and soften the breadcrumbs. Blend until smooth.For the grilled cheese spread the one side of the bread slices with the mayo then add the cheese and ham to the side without mayo. Spread the rest of the bread with mustard and add to the cheese and ham to make a sandwich. The sides with the mayo should be on the outside of the sandwiches.Heat a frypan over a medium high heat place into a frypan, cook until the outside of the sandwich is golden and the cheese has started to melt. Flip and cook the other side until golden, repeat the process to cook all the sandwiches.Serve the sandwiches with a bowl of tomato soup on the side to dunk the sandwiches into.
