For World Mental Health Day, Sarah shares some ideas when it comes to food that can improve your mood.

1/3 cup of olive oil
1/2 cup of maple syrup
1/2 cup of greek yoghurt
1 cup of almond flour
1 tablespoon of lemon zest
1 teaspoon of baking powder
1/2 teaspoon of baking powder
1 teaspoon of ground cinnamon
2 cups of rolled oats
1 cup of blueberries
1/2 cup of chopped walnuts
Preheat the oven to 180 degrees. Mix the wet and dry ingredients separately and then combine.
Add the blueberries last, stirring through gently .
Fill a muffin tray with the batter, sprinkle the chopped walnuts and cook for around 25 minutes or until cooked through.
