LOBSTER COCKTAIL SALAD

Cocktail Sauce

1cup Mayo

1/2 cup ketchup

1tsp hot sauce

1 orange, juice

2tbs brandy

1 WA Lobster, meat picked from shell, and diced.

1 pack baby lettuce leaves

2 baby cos, shredded

1 avocado, diced

1 red onion, pickled

1/2 bunch dill, picked

1/2 chives, cut into 1cm pieces

Method

In a bowl mix together the cocktail sauce.

Scatter the lettuce leaves over a large sharing platter. Top with the avocado and pickled onion.

Dress the lobster in the cocktail sauce. Scatter over the salad and garnish with the herbs and enjoy.

GARLIC BUTTER SCALLOPS IN THE SHELL

SERVES 4 AS A STERTER

Prep time: 10 minutes

Cook time: 5 minutes

Ingredients

100g Unsalted butter, softened at room temperature

2 cloves garlic, finely chopped

Sea salt and pepper to taste

1 tablespoon dill, finely chopped, plus extra to garnish

1 lemon

12 WA Shark Bay Scallops in the shell

Method

Step 1. Pre heat the oven grill to high. Place the butter, garlic, salt ,pepper, dill and 2 teaspoons of lemon zest into a bowl and mix well to combine.

Step 2. Arrange the scallops onto a flat oven tray in a single layer. Spoon in 1 teaspoon of the butter mixture on top of the scallop meat.

Step 3. Place under the grill and cook for 4-5 minutes, or until the butter is bubbling and fragrant and the scallops are just starting to turn white.

Step 4. Place the scallops onto a serving platter and serve with lemon wedegs.

CRISPY PRAWNS WITH SPICED SALT

SERVES 4 AS A STARTER

Using pantry ingredients that most people will already have…These are great with a glass of champagne or cold beer!

Prep time: 20 minutes

Cook time: 10 minutes

Ingredients

500g Raw Banana Prawns, peeled and cleaned with tail on

Oil for shallow frying

1 tablespoon sea salt flakes

¼ teaspoon dried chilli flakes

¼ teaspoon black pepper

¼ teaspoon garlic powder

1 lemon to serve

Batter:

150g plain flour, plus extra for dusting

1 teaspoon baking powder

1 small egg, beaten

120ml cold soda water

Method

Step 1. Mix the sea salt, dried chilli, pepper and garlic powder in a bowl and set aside.

Step 2. Heat 2 cups of oil in a medium frying pan to 170 degrees C. Mix the Batter ingredients in a bowl until it is the consistency of thickened cream.

Step 3. Dust the prawns in a little flour then dip them into the batter to coat. Cook in batches for 2-3 minutes, or until puffed and golden. Drain on paper towel to soak up any excess oil.

Step 4. Place the prawns onto a serving plate and sprinkle with some of the spiced salt. Serve warm with lemon wedges on the side.
